how does Texas mule deer compare to high altitude mule deer like NM and CO on flavor? I have taken 7-8 CO/NM mule deer and they all had a very strong twang flavor that was horrible, guessing part of their diet.

It had a strong smell of sage, but didn't taste like it to me, it was like any other white tail ive eaten.

I gave up hunting them in CO/NM 20+ years ago due to the nasty taste. They tasted like a gut shot smells, horribly rank, including the hamburger meat. They were all field dressed and handled properly from on the hoof to into the freezer, just like all of our WT. I could walk in my parent's house and the smell of it cooking would almost make me nauseated. The first several I thought might have just been they were older buck all rutted up, but the last couple were younger up around timberline ... only thing I could think of was something they were eating up in the higher elevations ... why I was asking about the west and panhandle MD.

I have taken 7-8 CO/NM mule deer and they all had a very strong twang flavor that was horrible, guessing part of their diet. This loin was from a Texas panhandle mule deer and it tasted delicious. I actually thought it had a milder, or less "gamey", taste than most whitetail bucks I've eaten. Not as mild as say axis, but more like elk. This deer had been hitting winter wheat fields hard and had also been eating lots of protein and corn. I'm sure diet had an effect on taste.
