For dove hunting? Improved cylinder or modified? I tend to use Improved in my 20 and modified in my 12.

IC for everything, it never comes out. Guy's got it. A lot of clays instructors will say this "pick a choke and never change it". One young man I know shoots clays and skeet with a duck choke. And he's very good. Find one you like and stick with it. If you put the shot where the bird is going to be, the bird will fall.

I tend to use Improved in my 20 and modified in my 12. I think your logic is backwards on this. Someone correct me if I'm wrong, but the only difference in 12 ga vs 20 ga is number of pellets, where 12 ga has more pellets. Velocity is the same. So given that, IC for 12 ga and mod for 20, here (theoretically) your pellets density is the same, velocity is the same, but a 12 ga gives you a bigger pattern.

With an O/U, IC over MOD. For a white wing hunt, MOD over IM.
With a single barrel, usually IC... especially early season. I keep a MOD with me in case shots are a bit longer.
