Put this nice boar down this weekend. He came running through the creek bottom I'm hunting, so with a quick whistle he stopped in his tracks and I put one 6.5x55 mauser round right behind the ear. He was DRT after a few leg kicks. I was out hunting solo this time and it was quite a chore to get him hauled out, cleaned, and butchered into the freezer. Cooked up one of the tenderloins last night for the wife and I and it was delicious. Here's one side of the ribs cut into a slab of spare ribs, rib chops, and a saddle of loin. Looking forward to those rib racks hitting the pit. Didn't see the buck I was after as my time was cut short with this guy, but I'm happy for the time spent outdoors and the meat in the freezer. Well done! And wrestling that big boy out and to the butcher site all by yourself must have been a real chore. I've knocked a few down that weren't that large and that just plumb wore my old butt out by the time I got 'em hung and ready for the knives.

Man this is great to see. Hogs are excellent to eat if you don't mind working a little harder to get them cleaned....even boars. Congrats on a nice shot and boar. try adding a cup of baking soda and and a half a cup of salt to the ice. Leave the quarters in there a few days. It's good to let the first ice melt to get a slurry. Just to get everything mixed up and let the meat sit in that for five hours or so. After that drain the water and let the meat sit in ice for a few days. It pulls toxins out of the meat and the meat gets more tender as it breaks down a bit.
