Question who does everyone use for processing exotics during the off season as most small game processors are shut down?

kdkane - where do you recommend going in Houston? I am south of Houston and take everything to 9th Street Meat Market in Texas City. There are some others around that do a fair job, but I like their turnaround time and I know I am getting my meat back.

Wensel Lonestar Meats in Hamilton, best ground meat products I have ever gotten made. Can bone out the deer and freeze it then take it here when you want.
There is another in Hamilton that I have used do not remember the name. But there are 2 in Hamilton.

Yeah I use Whaley's in Hamilton. Best jalapeņo cheese summer sausage I've ever had. It was formerly Bagwells and the new owner makes the same recipe summer sausage. I didn't know Wensel was open all year. I'll have to check them out. My lease is in Priddy so Hamiltons only 30 mins or so away.

I have had a lot of deer processed at Bagwells and BJ Whaley got Bagwells recipes when he bought the business, but he is only open for processing during season. BJ is also a good taxidermist and owns Black Dog Taxidermy.
Hamilton Meat Company is the other one I was trying to remember that is open year round. They make some good summer sausage as well.
Wensel makes some killer bacon burger and the Lone Star brats are very good with Beer already in the brats.
