White or Mexican corn on the cob. Remove kernels, add in butter, lime, crumbled queso fresco (bottled parmesan in a pinch but not nearly as good), crema or heavy cream and a sprinkle of your favorite chili powder.

Made a creama avocado poblano sauce. Got the queso fresca, chili powder, butter, and tapatitos. Forgot the cilantro, oh well.

Don't forget the Mayonesa, I usually get butter, mayo, limon y chile. For the regular roasted corn I use more butter and chile, its best if the corn is roasted over coals in an old steel car rim while waiting in line at the bridge.
I miss those days in the Valley....
