Shot a nice old ram hunting with Mulie Mike last October. The meat is very good, ground. Not very Gamey and a nice flavor. However, the steaks were as tough as leather and almost to the point of being inedible. So yes it is good meat......just get it ground. My

I've eaten them triple tenderized and they're still tough. However, ground it's great. Some of the best ground meat I've eaten. And ewes are always good. I will admit though that if the ram is rutted up, it can be pretty nasty. And that is a dice throw since they can mate year round.

I have eaten ewes and young rams cooked like venison, ground into hamburger, sausage, jerky or in tamales. I have had the meat cooked like Carne Guisada that was dang good. What I found with them was to skin them ASAP and get the meat in a cooler or on ice. Had guy tell me the best way to do older rams was to skin immediately and not to touch the meat with your bare hands if you touch the hide or let the outside of the hide touch the meat. He would then age them in a walk-in for at least 2 weeks. Said they actually took on the texture of beef when aged and were tender enough to eat.

The smaller ones aren't bad. The big Rams are gross. I saw some Rams caped the other day in Rocksprings at Franco Processing and he said he can't even give the meat away so he burns them.

Yes there were two giant carcasses with the heads cut off in the bed of a truck and I mean BIG animals, I thought they were cows and he said they were big aoudads and no one in town wanted them. Seemed like a major waste of meat but he said they taste like a** and even the townspeople would take them. And if you've ever been to Rocksprings there's some pretty low income folk there you would figure would take it.

I was given an aoudad and couldn't cook it to human standards. I made jerky out of all of it.

Low and slow in the smoker...
Get it pull the bone out tender and make tacos with a green salsa and cilantro/onion.

We usually have them made into sausage. Got a whole ewe made into spicy garlic by Miller's in Llano this year. Delicious.
