Went out this morning and got a shot on a doe at 50 yds. I've practiced this shot a hundred times and know I'm on. I just switched to the NAP Spitfire mechanicals over the Slick Tricks and these are the first mechanicals I've shot out of my Parker Concorde. Anyway, everything looked great for the first 20 yards and then it looked the the arrow slowed down and went way left and dropped off just like a wicked curve ball. When I say way left, it hit the ground behind the deer about knee high. I've been practicing with the Spitfire practice head that doesn't open and didn't want to use the real heads as they would dull. So could this be an issue with them opening during flight or am I just that terrible of a shot?

Sounds to me like it opened in flight.
IMO broad heads come in three packs for a reason. I practice mainly with field points but I always dedicate at least one broad head for practice for the exact reason you mentioned above. You can sharpen it and use it for a backup if you're not comfortable shooting it as your main arrow.

Does it have Crossbow on the package for your NAP Spitfire mechanicals?
Crossbows have a much shorter power stroke and generally are faster than vertical bows, many expandable broadheads made for vertical bows will open one or more blades sometimes before the bolt even gets off the string of crossbows.

Always shoot a few practice shots with the mechanical or fixed blade you'll be hunting with to avoid situations like this. I've shot rage extreme mechanicals for 3 years and have zero issues with them. Luckily you missed her clean. Draw it up as a learning experience

I went out with the broadhead since it's dull anyway. First shot at 20 was 6 inches high and 2 right. Third shot at 30 was 4 right and 4 low. Third shot at 40 was right on and the practice head was inside the center dot. Looks like it is pre deploying in flight. Guess I'll stick to the fixed blades for now.

Yes Kmon1, they are crossbow Spitfires. When I recovered the arrow all three blades were deployed so I can't say for sure they open in flight, but I can't think of any other reason for it flying like that.
I appreciate the advice guys. In the future I'll practice with a broadhead I'm hunting with instead of the practice head they sell. I've shot the SlickTrick a few times and it flies true. Hopefully I get a chance this weekend since it looks like good weather.
