One of my favorite traditions leading up to hunting season every year.. time to make room in the freezer for some fresh meat!

New Recipe I tried and loved.. Beer Can Bacon Bombs.


served up on a bed of mashed potatoes.. meal for 2


One of my favorites from college.. SOS!



Beef Round with rice and Gravy


'Scrap' wraps.. Deer neck, flank, lower shoulder, rib, and other 'scrap' meat that i would usually grind pounded and wrapped with jalapeno bacon and cream cheese

DG Braised Mallard Breast with reduction gravy with garlic mashed potatoes, stuffing, and brussel sprouts. Used the leftover marinade to make gravy. This entire meal (other than the duck breast) came from Dollar General.. cost about $4 to make, and took about 30 minutes! Used the Teriyaki pineapple marinade, salt, garlic powder, and black pepper to season. Braised in the skillet, then reduced the marinade, poured in some hot water, and thickened with flour. DG brand instant mashed potatoes, DG brand instant stuffing. Microwave brussell sprouts.

I used ground venison mixed 60/40 with pork (wild hog) trimmings. You need the meat to be fairly sticky when you mold it.

Man, Coach, that reduced gravy left over from the braised mallard breasts looks like a great roux. I might have had to gone ahead and made a gumbo if I saw that on my stove top! All it needs is a couple handfuls of celery, garlic, and onion, about a quart of chicken stock, and some browned duck and andouille. Dammit I'm ready for some gumbo weather, come on cold fronts! LOL

Mom's side of the family is cajun. Nana made a great gumbo a couple weeks ago.. ready for round 2!!!

Breakfast at the ranch. Sauteed dove breasts smothered in gravy. Grandpa's old coffee cup (his place, he passed 3.5 years ago). Always on guard!

Marinated in the garlic herb bottled stuff for 3 hrs. Seasoned with garlic salt, pepper and a little paprika, grilled over high heat to medium.

All my grilling is done with split oak.. Don't use charcoal. Takes a little longer to get the heat right but it's much more consistent and I love that smoke flavor!
