Got the fire lit at 4:45, went back to bed, got up at 6 and put a 10# on. 225 for four hours, just opened to put the thermometer in and it's reading 170!? Checked thermo and it's right. Normal size brisket, never had this happen, guess I won't crutch it and see what happens. Anyone ever experience this?

therm for pit or meat therm? are cooking on a pit or in a smoker?

Pulled digital out of meat and left on rack, matched up to pit thermo, offset smoker.

Wrapped in butcher paper around noon, got to 201 and pulled it at 1:30. Never had a brisket cook this quick.

I've never had one cook that fast either, I know fattier/more marbled meats cook faster. Maybe you got a fattier brisket?

10# brisket cooks fast 4-5hrs I smoke them all the time.

Lots of more experienced smokers than me but I've noticed it just depends on the brisket. Never had one cook that quick but i've had a few that have taken much longer than normal. Took 13-14 lb'r 17 hrs before.

I think that we usually do a larger brisket. I always look for the biggest one. By the time it's trimmed, you lose a lot of the weight. I usually smoke mine all night and finish in the oven the next day.

That 1:7 is really far superior to the standard 1:9 on heavier briskets...provides much more stability! Mine really shines in the 14 to 16lb range. If it's a 1:7 smoker it will smoke much faster.

I stacked two on my Egg a few weeks ago. One took 14 hrs and the smaller one I pulled at 12. They were both excellent. I think the comment about the heat getting a little up during the cook was probably pretty accurate. How did they turn out?
