Anybody ever had it? I am looking at getting one processed but wanted to see what everyone else has done with their meat.

I spoke with the processor I use and he said to make it into link sausage, pan sausage, basically anything ground and mixed with pork and its pretty good. Anything with the meat by itself is a no go.

Ive had it mixed with pork and made into dried sausage and it was great. Is dark in color compared to the white tail sausage, but tasted fine to me. Never had it prepared any other way.

I've shot 4 pronghorn and still never tasted one. I'm sure it is okay mixed in sausage, but I already get plenty of good meat from deer and elk. The are several people in town always willing to take them.

Some of the finest eating I've had. I actually like antelope steaks better than whitetail.

My dad shot this one and didn't want any of the meat, told him I'd take it and give it away/process some of it since he didn't want it.

I've killed a bunch of goats.
Put it on ice in an ice chest for four days. Pull the plug and keep adding ice every day.

My experience is that it's okay to eat if you kill the animal quickly and get it cooled ASAP and to the butcher. But then I like to eat liver...so you may not want to take my opinion.

He is full of crap, and giving a bad opinion. He must of only eaten spoiled pronghorn meat...
99% of people can't tell the difference on grilled backstrap.
Most people smell the sage and stop right there. Ice them down and pull the plug so water drains out and the sagey musk smell goes bye-bye.

A group of us went up to Dalhart area and shot three at the beginning of the month. None of them wanted the meat so I took it all kept it on ice and brine water for 5 days. took out some of the back strap and fried it up and it was delicious! It's at the processor now being cut up into steaks, roast, burger and sausage. Ours were eating in wheat fields so that may make some difference but when we go back next year you can bet I'll be bringing them all home again

I grilled back straps and tenderloins from one I killed a few weeks ago. Pleasantly surprised from all the negative stories I've heard. Very tasty!

Ok gotcha, I was just asking for recommendations and he told me what most of his customers do. I've used Hudson's since I was a kid so I'm sticking with them since they do an awesome job I've got it iced down and draining just like I do with white tail, one week minimum. May go and extra couple of days until that smell is gone. Thanks.
