Take about a pound or pound and a half and chunk it in a at least a 14 inch cast iron skillet with a big dob of butter. Cut up a big sweet onion and throw in a can of green chilies. Add one packet of taco seasoning and let brown. When the onions are clear slice up some potato's and mix them in and turn the heat down. When the potato's are tender mix up a packet of yellow cornbread and pour it on top, put in the oven at 425 until the cornbread is done. Breakout some sour cream and enjoy. If need be you can skip the cornbread and just put a nice layer of cheese on top and serve when melted.


Yes! A Weatherby does kill them deader.

Hwy_man you gave me a great idea. Browned the elk with an onion. Added 3 cups of leftover au jus. Covered and cooked 30 minutes. Added 2 cans of boracho beans and 1 can baked beans. 4 potatoes sliced. Cooked for 30 minutes. Mixed 1 box jiffy cornbread, 2 eggs, 1/2 cup milk, couple dashes of hot sauce, can of cream corn, 2 cups cheddar grated. Poured over the top and baked 40 minutes at 350. Let rest 15 minutes. Great with some jalapeņos.
