I don't see a thermometer. Do you worry about the temp? How long does it take to cure? I would like to do this some day.

We used a thermometer later. The salami are done. I brought the internal temp to 168. I finished them in the oven. Then I put them on ice.
I had never done salami before so hopefully it will be good. Online it says to mix the seasoning and cure with the meat and wait 24 hrs till you smoke it. We just did it right away. Hope that's ok. We have made the slimjims like that before and they have been perfect.

use sheep casings, keep them refrigerated and soak in water
