Not sure what else to call them, but these are really good and easy to make. My brother was the owner/operator of a steak house back in the day so I gotta give him credit for the idea. Yeah we all know jalapeno and bacon makes everything better so it ain't a shocker. Cut off the stems off the jalapenos and cut them in half. Season a duck breast with steak seasoning. Put the duck between the jalapeno halves and put a tooth pick through it. Wrap in bacon. The jalapeno keeps the duck from getting overcooked and the bacon gets crispy like it should. Before I would just wrap the duck and either the bacon wasn't done right or the duck was over done. This makes it all get done right. Cold beers don't hurt...

i take duck breast and chop them real fine and add bacon,cilantro,shredded cheese and green onions and stuff into green chillies(anaheim chilli) and put them on the smoker!!!! or on the grill

I could make a skunk taste good with that exact recipe. I do it with my divers after their bath in buttermilk.You get the taste of the fowl, yet not the foul taste.

I cut the seeds and the white meat out of the jalepeno. I soak the green halves of the jalapeno in really hot water for an hour. it takes the burn out of the jalapeno but the flavor of it is still there.

I don't like it where it is so hot you can no longer taste or feel anything but the burn. I like to use purple onion on one side of the meat and the soaked jalepeno on the other.

I do the same thing with dove. I marinade them in Claude's brisket marinade. I cook them on the grill. Suddenly my nineteen year old wants to stay home and eat. Serve with cold Shiner - good to be alive in Texas. This even makes store bought chicken palletable.
