How do yall cook your hogs... and how do you have them processed if you do.

I will bbq/smoke ribs and quarters, we make jalapeno and cheese sausage out of them, mix them with deer and make ground meat which we use in place of ground meat, dried sausage, fresh sausage, thats all I got for now but sure there is more.

bbq ribs, ground meat make burgers and sousages, sousages I do 50/50 pork, sometimes I cure portions of meat and slow smoke.

Klemke's in Slaton will process them but they have a skinning fee. I trim the fat off and mix 1lb maple bacon per 5lb hog and grind it for sausage and what redchevy said

rub em w/ salt and pepper........smoke for about 3 hours...... put into covered pans for another 3/5 hours..... falls off the bone delicious....no need to add anything else.......

i first drain them to get all the blood out amigos then i marinade them with alot of limon juice and other spices...for like 24hrs then i deep fry them with lard dont do it with oil i prefer lard than that cooking oil....then i smoke the ribs thats one way i make then the other "PUERCO EN SALSA" "PORK IN SALSA" Mexican Cooking Killer So I choped and cooked my first hogs for a vary special ocation my newborn's birth....here u ya go..... Before hogs ribs After hog ribs Carnitas para el mexicano.

the little ones go for a spin on the smoker. lately with the bigger ones, i have been grinding all the meat but the ribs. i don't season the meat til i am ready to use it. i bought different sausage seasonings to use. it makes great burgers, sauce for spaghetti and works in all the hamburger helper recipes. sometimes i get crazy and stuff some squash from the garden or make a pork explosion. squash: pork explosion: and after a trip to have the arteries cleaned out we celebrate with a pizza burger.

Time to double up on the cholesterol medicine and try out the Pork Explosion!!! I think I will serve it on a bed of Fried Pork Rinds and wash it down with a tall glass of bacon drippings. Yum. I made some Pork Colorado with Green Chille last night out of the one I killed at J.J. Kent's. It was real good but went too fast. Marinating the last of the Backstrap and Tenderloins for grilling this weekend. Hope the heat quits soon so I can get back to J.J.'s places and get me some more pork.
