You've just unlocked the okra secret for me, I think. I don't like okra in my gumbo because it makes it too THICK to eat.
One question: How long should I cook the okra on a skillet w/ some butter (or oil?) ? 3 minutes on medium? 10 minutes? 20 minutes?
Always appreciate learning sumtin new from da bayou state, when I can.

Hopedale, You've just unlocked the okra secret for me, I think. I don't like okra in my gumbo because it makes it too THICK to eat (slime effect).
How long should the okra be cooked on a skillet w/ butter (or oil?) ? 10 minutes on medium heat? 20 minutes? How do you remove the slime? Tilt pan and scoop out okra?
Always appreciate learning sumtin new from da bayou state, when I can.

Hey Moose, How many can this feed? I'm wanting to try it but I'm the only person in the house who eats duck and I dont want to make a big portion.

It makes a big pot of gumbo. You will be eating on it a while by yourself.
Don't tell them it is duck. They will never know.
I made a pot of it a few months ago and fed myself and two big ol boys for two meals and we still had a bunch left over.

Tell ya what, I put some in the thermos from time to time.
Eating ducks while shooting more ducks is pretty intimidating for them, they give up and just fall right in the hole.

Got it bookmarked. I'm trying it this season. My son and I both had it for the first time at Miller Creek Ranch on a youth duck hunt 2007, it was great (Stony made it). Looks like a good way to roll with duck. I can tell you my last experiment, duck chili, was not good.

Its tasty Guy, give it a shot.
Also, if you don't want to make the roux, you can buy it at the store.
The store stuff is just as good and cuts your prep time by close to an hour.

i didn't follow directions at all just added some of the ingredients with the duck and shazam i like duck!thanks moose can't wait to get the rest of the ingredients and try them all together.
