STUFFED VENISON BACK STRAP

One 12-14" length of back strap, avg 3-3.5 pounds. Butterfly or cut and roll out back strap until about 3/8 of an inch thick and flat like Skirt steak. Brush with butter or spray with butter flavored PAM. Season with favorite Grill seasoning or Fajita Seasoning. Drizzle a small bit of BBQ sauce and or Worchestershire sauce and let sit while preparing the stuffing. Drink a beer. In a bowl combine the following... 1 Lb Jimmy dean SAGE or MAPLE Sausage. 1 tspn Cumin 1 tspn Taragon 2 heaping tblspoons Chopped Fresh Garlic. 2 heaping tblspoons of Cilantro or parsley 1/4 cup Chopped Seeded FRESH Jalepenos 1/4 cup of Raspberry Chipolte Sauce. One Chopped Green Apple 1/4 Cup lightly chopped Walnuts or Pecans Drink a beer. Combine all ingrediants in the bowl mixing with you hands. Drink another beer. Take about 1/2 stuffing mixture and plaster onto layed out back strap and roll it up. Spray or wash again with butter or PAM and re season with favorite grill seasoning or Fajita Seasoning. Wrap Back Strap with JC Potters Thick Sliced Pepper Bacon and tie off with string or wire to keep bacon on and back strap from un-rolling. Drink a beer. Place on preheated grill on high until bacon all the way around begins to cook and then turn down grill to low and cook for about 15-20 minutes. Remove string or wire and slice and serve....oh yea....drink another beer. What about the remaining sausage mixture?....Drink another beer and core fresh halved Jalepenos and stuff with cream chease and sausage mixture. Cut Thick sliced pepper bacon in 1/2 strips and wrap the japs and skewer. Cook over grill heat until bacon is done and serve. Have another couple of beers and enjoy the sounds of people grunting and groaning over your creation.

Sounds awsome!!! But I will substitute a couple of "Knob Creeks" for the beers!

Sounds kinda like a Bacon Explosion. Had one last week at the Deer lease with Italian sausage. Bueno Chilada!

I just want to know what knife you used to slice meat? By the way do you know how many knives you own? I use the LARGE CAMP Knife STIC made for me....last knife count was a lil'over 400.

I fixin to bust off on this sucker here in a little bit. Gonna smoke it for the game tomorrow. Season, tenderize and marinate tonight, cook the hell out of it tomorrow. I'll try and take pics.

I think you forgot about two or three beers in that recipe. hehehe.... Sounds good I may try it one of these days if I could ever kill a deer this year.

I'm goona try stuffing one of my backstraps with boudin this weekend I'll let ya know how it goes
My thought is to slice the backstrap stuff with boudin cook low and slow on the grill for 20-30 monutes then wrap it with bacon and back to the grill at about 225 until the bacon is done then pull off let stand for about 10 minutes and eat... Did I miss anything??????? The beer drinkin will is a given I will start that right after I start the grill.

I tried the recipe yesterday and it turned out awesome! I also followed KBTXHunter's lead and added the diced up yellow bell peppers. Using the leftover stuffing in bacon wrapped grilled jalapenos was very good too! Thanks for sharing the recipe.

P.S. Don't know if the substitution of Weller's for beer works or not, but I can vouch that it goes very well with Makers Mark.

Tried this recipe for V-Day. Excellent! I used a young doe backstrap and wild hog sausage. I also made the pepper poppers. Everything turned out great and the people left full and happy.

Clean I'm haven't had time to make it yet the wife wrecked her car so I've been using every spare minute to find her another one and eating lots of fast food for the last couple weeks I'm plannin on making it next Saturday
