i soak mine and then slow cook them on the stove with ham or bacon with onions and jalapeno peppers and garlic and right before they are ready i add a bunch of cilantro.

There used to be a group of us Vietnam vets that did some of the area cook offs, Here is the bean recipe that I think won 2ND place, might have been 3RD but who remembers stuff like that after 20 plus years. Pinto beans 4 cups pinto beans, cleaned and washed, soak overnght 1 package bacon, sliced into squares.
Start cooking beans with the bacon, bring to a boil, cover and keep at a low boil. 1 1/2 hours later prepare seasoning. 1 T Chili powder 1 medium onion finely chopped, or 1 T of onion powder 1 jalapeno, seeded and finely chopped 1/2 t cumin 1/2 t garlic powder 2 t salt 1/2 t black pepper 1/8 t cayenne pepper Combine the seasonings and add to the beans, finish cooking until tender.

If you have a smoker, you can take the lid off the bean pot and set the pot inside of the smoker. Even cooking the beans over a wood fire will add some smoke flavor to them. Either way makes the post washer whizzed off, that smoke or open flames adds work to the cleaning of the pot.

I make my beans with a can opener. Ha! Seriously, I will give yours a try. To make this recipe taste more like Ranch Style beans out of the can add a 8 oz can of tomato sauce and a little ketchup, start with about tablespoon. May take more, been years since tried that version

We had some this evening. I soak my beans the night before and crock em all day. Flash brown some owens breakfast sausage, couple onions, 3 or 4 cloves of garlic, diced up, one teaspoon of beef boulion, two tablespoons of liquid smoke (to taste)salt and pepper to taste.

has anyone ever smoked the beans on a pit prior to soaking? i had some pintos that had a smokey flavor that were incredible - the guy would not give up his recipe. i have and the beans were excellent! whats also good is to take the fatty part of the brisket or the trimmings and chop them up really good and add that to your beans............whenever i do my briskets which is pretty regular this is always a must according to my better half!

After you wash your beans real good and let them soak over night, wash them again and drain the water off of them. After that the flavor of the soup is up to you. I like a couple of butt Hams bone in and I throw in 4 to 6 hamhocks. Lots of onions and garlic. I do not do cilatra because it is overwhelming. You can always add fresh after they are cooked. Back in 1991 I forgot to get my butt hams and used sausage instead. For that event I have to make the pintos one certain way. You can be very creative with beans. As a matter of fact I have some black beans in the fridge from the last GI batch I made.

I season before the first hour and a half and have never had hard beans. Also I never soak.
How I make beans:
Take about 6-8 strips of bacon and cut up. Cook the bacon down til crisp and remove. Add a chopped onion and chopped peppers. I usually use a poblano and some jalapenos. Start cooking these. You don't want to caramelize, just soften up a bit. Then add some chopped garlic. Then cumin, chili powder, salt, black pepper, thyme, oregano, beans, a carton of chicken broth, a beer, enough water to cover. And finally, a couple of smoked ham hocks.
Cook until done. Never had any complaints.

Here's my west Texican bean recipe:
- 1 bag of pinto beans - 1 yellow onion cut in 1/2 - ham hocks - 3-4 cloves of garlic cut in big chunks - 2-3 jalapenos cut in half with seeds - salt - pepper
No need to soak the beans. Just rinse and sift through looking for small rocks. Add beans to pot, then cover with water about 2 inches above beans. Add ingredients and bring to boil, then low heat simmer for 3 hours or so. The water will cook off a little, so add more water as you go, but make sure the water is luke warm otherwise your beans will split. Don't let the water cook down too much or you'll end up with mushy frijoles.
The last 20-30 minutes, add cilantro with the stalk if you want to fish it out or chopped if you want to leave it in.
I like my beans firm not really soft/mushy.

Wash beans, etc., then put in the big pot and cover with about 2" water
Bring to high boil
Put lid on and let em set a couple of hours. Dont uncover. Turn burner off.
At this point add some sea salt and a little fresh gound pepper and 2-3 bottles of dark beer (Shiner), a couple cloves of garlic.
Turn burner back on, I like to then just let them cook all day at slow boil. Keep checking and adding water.
Then cube up some salt pork and fry in in SEPERATE pan (save the grease. Set aside.
Roast some (5-6) jalapenos in your over broiler until black, deseed (i never peel) and dice.
Make some REAL fresh pico de gallo
When the beans are really good and done and "soupy", add the fried bits of salt pork and the pico, and another bottle of beer. Bring it back to a quick fast boil, and you are ready to eat.
Sometimes I also drip in a few drops of liquid smoke right at the end too. Season with more salt and more black (or I like white) pepper after they are fully done.
They are better the next day.

The Boracho beans sound interesting.
Now, I make some dang good pinto beans. When the beans soak up the water, I always add a beer and some more water as needed. Once, I got the bright idea that if some beer improved the recipe, I would just substitute beer for the water. Once done, my wife and I each ate a bowl and agreed that they were the best beans I had ever cooked. Then, about an hour later, our guts started rolling. The gas was so bad that we had to skip our Grandsons basketball game. Never again.
Without a sense of urgency, nothing ever happens.
