Or past time I should say, and that is to clean out the freezer for up coming season. I have always had that rule. But one thing I have learned is migratory bird is best eating fresh. I never freeze dove, always eat them fresh, and duck I freeze very little. I freeze some to hold me over the summer, and it is never as good as fresh. This is how I like to cook duck, this was my last cooked fresh duck, and it was delish...

Need bacon to kick her off...

And aging is very important, 3 days minimum, 5 days perfect, and 10 to 14 days max, this based on like 36 degrees. The rest of my dove i'm gonna age good, my day 3 limit I'm aging whole.

Same here but I ate them a little warmer. Ageing makes all the difference.
