Fake dove skin...

Gotta slow cook'm indirect heat, otherwise the fake dove skin will curl up and fall off. I cooked these low and slow about 45 minutes, let that bacon render down. They were delish, and easy, less bacon, bone protects the bottom. No jalapeno tho....

I would say 300 to 400, really go by what it looks like. I got 4 burners on my gas grill, with all burners on low it gets to 400 or 450. I would open the grill top every 10 minutes or so and let the temp drop, last 15 minutes or so I went down to 2 burners, top temp there is 300.

Yep, when the skin is crispy.

Prepared these for my son tonight. No seeds in the jalapenos, he is not quite there yet, pack that cheese in there, yeah this will be good. I'll throw these on little later when he is ready for them. I love cooking this stuff... grill

Are those fresh jalapenos or the pickled kind that come in the can? I like both but the pickled kind seem to have a bit more bite to them.

I am old enough to know when it is my bed time

I cooked up my opening day limit and between me and my girls we ate just over half of them. I put the rest in our second estate sale purchased fridge. That damn fridge ended up just going out right after that. So I had to toss all my awesome leftover dove. I did keep the beer that was in there. Oh and most of the time when I eat the left overs I don't even bother heating them up. The smoke flavor is so great when they are cold for some reason.
