What are some of the plant species used in West Texas plots? What seeds/blends and methods for sowing the seeds have you used for different times of the year?

Depends what area your talkin about but Wheat grows most everywhere out there.

I would plant wheat and Austrian winter peas. . Austrian winter peas have moderate drought tolerance but have good winter hardiness. Deer love them.
50lbs per acre. Wheat 100lbs per acre. If no soil test, then 150--200lbs per acre of 13-13-13.
