A big hog is telling this coon the rules. I ought to go back and shoot him, but tomorrow maybe. Or I might bait the trap.

With all the ice and having the power down, the neighbor and I decided we didn’t want to mess with the hog. But now it’s open season again, but the hog has disappeared again. He’ll show up sooner or later. I haven’t decided whether to shoot him or try to trap him. You haven’t eaten the whole 7:15 hog yet, have you?

I'd definitely shoot both. The hog first.

Nope sure haven't. Still in secondary processing. Loins went into a wet brine last Saturday and going to smoke them today for canadian bacon. Still have 12 lbs of ground in the freezer waiting on my new sausage stuffer to show up, I was about 1/2 lb in when the old one died, hence the bulk rather than linked breakfast sausage.

Five lbs of breakfast sausage went to an old army buddy that dropped by the house. Still have 6 lbs of that in the freezer. Smoked one shoulder already and it was pretty dang good as pulled pork. Neck roast and 1/2 of one of the loins was made into carnitas. 7:15 hog has been mighty tasty.

That makes me happy.

Canadian Bacon is out of the smoker.

Dang, Bones, that looks great. Maybe on down the road I can swap you another pig for some of that Canadian Bacon.
