Any good sources/books that cover creating year round food plots for different wildlife?

Your local county AG office will have quite a few (pamphlets and such) and more tailored to your area. Also you should have the AG agent out, he/she can answer tons of questions directly related to your county's conditions.

Much will depend on your location and climate.

Not that I know of and I've tried it a lot on my place. It is my personal observation that the deer on my place pretty well ignore food plots in favor of natural browse when it is available. A late Fall rain will bring out a bunch of native rye that the deer prefer over wheat, oats or planted rye. In the Spring, the new native growth seems to be all that they need or want. This year, some unusual summer rains created a bumper crop of acorns and they ignored everything else.
