My wife is taking chemo and can't eat any fried foods.

I need a good recipe for baking deer that won't turn out to be shoe leather.

Cut it into steaks and grill it. Med-rare. Sorry, don't have a recipe for roasting.

Best wishes to your wife.. If you have a crock pot.. I always leave one or two hind quarters intact with bone in. Sometimes according to how big the deer is.. you may have to saw or cut off the shank. Throw in the shank if you have room.. I add the hind quarter or whatever meat you are using.. and add water (just enough not to run over while cooking) black pepper and Tonys chacheres seasoning. Place on high until it begins to slightly boil.. turn on low and walk away for 5-6 hours.. I usually cook mine over night.. The leg bone will pull off the meat it will be so tender..I remove the leg bone when done and add potatoes,baby carrots or whatever you want to add.. Throw in a chopped onion... also. I take backstrap steaks or again whatever part of the deer you are cooking.. use the glass baking dishes..just seems to taste better.. grab a can or two of the larger cream of mushroom soup.. bake on 350 degrees for 45 minutes.. reduce heat to 250 for 2 more hours.. ENJOY!!!!!

In the morning, sear the roast on all sides with a hot cast iron skillet. Cut up big chunks of potatoes, carrots, and onion, maybe a couple of celery stalks. I like sweet potato too. Put the veggies in the bottom of a crockpot and put the seared roast over the top. Pour one cup of dry red wine over the roast. Then sprinkle two envelopes of Lipton Onion Soup mix right over the top.
Put the crock pot on low and cook all day until you can shred it using two forks. It will have made a lot of liquid by now. Pull out the roast. Scoop out the vegetables with a slotted spoon.
Mix up 1 teaspoon of corn starch into 1/4 cup of cold water and pour it into the liquid left in the crock pot, mix well,and turn it on high, and cover.
While the gravy gets thick, shred the roast with two forks. Add the shredded meat and veggies back to the gravy mix. Stir in carefully with the slotted spoon and serve.

Muzz, didn't mean to post almost the same thing over the top of you. I guess you posted while I was writing. Your's sounds dang good though!

My wife and hunting buddy for 45 years now will appericate it also.

What I like about the recipes, beside being great, is they are easy on the old cook. (Me )
