Watched this deer for four years, never shed his antlers or velvet. When I did finally kill him, I found out he was a stag. Has anyone else seen this before?

I shot one back in 1987 in East Texas.
It was the last day of the season. His antlers were still soft.

Stupid question, but what makes it a stag? Google only made me more confused.

That is caused by a hormone deficiency (no testicles).

A condition called "Hypogonadism" causes stag bucks. TPWD released a good paper on it a while back.

Lease partner killed one in Llano county. Biologist told us that ther is a fungus (moss) that grows on the granite out here that the deer love. If they eat too much of it as fawns it can cause the jewels not to drop. Hence a cryptorchid deer. Always velvet little to no testosterone. Uncommon but not rare out my way

From the S.E. Louisiana pine woods. (No granite around here. grin)
