My favorite cut.. Cooked 2 hearts last year and still believe if you try it you will never leave another one in the gut pile.

I've had beef heart, and it was good. Kinda tough, but tasty. Try the tongue next time too. Mami makes a great beef tongue in sauce. I imagine deer would be about the same, just smaller.

I guess it is a muscle. Don't think I would ever prepare it myself, but I'd try it.

Soak it in milk for about a day an see how much blood it takes out of it and tenderizes it as well. Pound it thin and fry, really good

Good to see someone else enjoying it. Not sure why some people think its gross, its muscle just like every other part they eat.
