I am a big fan of J.C. Potter sausage. Most sausage company`s adds ice to the sausage making process to keep the meat cold but J.C. Potter extrudes theirs thru refrigerated pipes to keep the meat cold before packaging. The ice added to the process ends up as water that you end up buying. I was told this by a sales rep for J.C. Potter years ago when I sold their sausage. Plus it is made in Oklahoma, a Red state.

I was raised on Owens. Moved out and switched to Jimmy Dean. Never had the JCPotter. Best breakfast sausage I’ve ever had came from Ye Old Butcher Shop in Plano.

Any religion that bans pork would be a market also there are some people still worried about pork being a carrier of disease. I know a woman that loves sausage but won't buy pork sausage. Her go to is chicken sausage with synthetic casings.

I’m out on that fake stuff and have always been more of an Owens kinda guy. Just made omelets for dinner with sausage, wright’s thick cut bacon, and cheese. Oh man it was good.
