Lemon Mascarpone Shrimp Pasta - 11/29/23 01:05 AM


Neither the She-Wolf nor I had made any dinner plans so when it got to be about that time, Jane got creative.

She knew we had some fresh shrimp in the freezer. She also had mascarpone cheese and broccoli available. I peeled and deveined the shrimp. She whipped up a pot of pasta: half regular spaghetti, half whole wheat. In a saucier went butter, onions and garlic; saute. Toss in the swimps. Salt, black pepper, red pepper flakes. Chase the shrimp around until close to done. Lob in the broccoli. Lemon zest and lemon juice. With the shrimp done and the broccoli crispy-tender, stir in the mascarpone. A little white wine and a bit of pasta water. Fold in the pasta. Reduce to the consistency that appeals to you. Enjoy!
