I've only cooked it once. Recipe was pretty easy. Salt, pepper, grill.

Pan seared with butter, S&P and lemon. Keep it simple.

Wrapped in foil with butter, salt, pepper, and some onion. Set on grill over some hot coals. Enjoy in just a few minutes.

Had it at a restaurant one time cooked whole stuffed with sautéed mushrooms. That was nice

Roll in flour, salt and prpper. Cook in bacon grease over the campfire

What kmon11 said, but the only trout I eat anymore are small brook trout. I'll take crappie or yellow perch filets over trout any day.

The only way I eat it stocked river trout in Arkansas is fried with seasoned cornmeal in cast iron on the riverbank.
I found it doesn't keep well in the freezer.

Crappie and other panfish, walleye are great fried. Have caught thousands of crappie. Many ocean fish are awesome. Don’t care much for salmon except occasional canned salmon dishes.

Trout is in plentiful supply fresh for us the next 2 months. Only keep 2 or 3 to cook within hours while following the regulations.

The corn meal in bacon fat is pretty hard to beat. One thing, there is a difference between hatchery trout fed liver pellets and wild trout feeding on insects. Grilling and smoking is also very good and maybe best on a hatchery trout. I think all trout in Texas are hatchery, so grill/ cover to also smoke.

Arkansas is the same way. Although you can tell a fresh stocked trout vs one that has been in the river for a while. The filets are pale versus dark orange....respectively.

They get over $20 a pound for smoked trout, so why not do that? Pretty good.
