OK what's a pig shot; and how do I make them? I'm into anything pork from the hooter to the tooter!
Pick your favorite sausage, Cut it 1/2 inch to 3/4ths an inch. I used Cheddar Jalapeno Sausage. Wrapped in 1/2 slice of Wright Brand thick sliced hickory bacon held by a tooth pick. Fill the cavity with cream Cheese. Sprinkle with your favorite rub. I used Fajita Lime. Throw on the charcoal smoker and when almost done, coat the top Lightly with your favorite BBQ Sauce, I used Head Country. Cook until done and BBQ has set. Perfect one bite with many flavor profiles. They were dang good.
