Cast Iron Pork Chops - 03/19/23 05:18 PM

1"-1.25" thick chops, cooked to 135° and rest for 5-10 minutes. Preheat cast iron to375°- 400° and turn chops every 2-2.5 minutes till done.

Now that's a winner there. Just S&P, or there a bunch of rub type seasonings also??

Sea salt, black and white pepper, garlic and Goya Sazon Culantro and Achiote Seasoning.

We have them almost weekly. HEB sells them (center cut only) sliced at 1"-1.25" @ 2.59 lb. in Family Packs every day. I don`t think the price of pork has gone up much or at all in the past 15 years.

I found whole loins for $1.29/lb and cut mine about 1.25" thick. Ended up with 16 chops. Should have bought another one.
