Smoked salmon with a brown sugar rub I made up for this cook. 1/4-cup brown sugar, 2-teaspoons Old Bay seasoning, 1-teaspoon ground black pepper and 1-teaspoon kosher salt. Mixed thoroughly and rubbed both sides of the salmon. Placed salmon skin side down of an aluminum foil grill mat sprayed with non stick spray. Used mesquite wood to cook salmon. Smoked about 40-minutes and then opened lid and grilled over coils for 3-4 minutes until I could hear the sizzle. Brought into house and covered with foil shiny side down for about 5-minutes. Turned out great!

Nice, I guess pellet smokers are SOL.
