Poke Chops

Bought some boneless pork loins for 1.47 lb. a while back @ Kroger`s and we have been literally eating "high on the hog" for some time now. My favorite is to pan sear 1"-1.5" in a cast iron skillet (flipping every 2 minutes) to an internal temp of 135 degrees and let rest. They are so tender that to use a knife on them would be a mere gesture. Last night I fried some that were lightly breaded with flour. Oh My.
