Spinach and Bacon Stuffed Portabello Mushrooms

Four great big mushrooms, stuffed them full of spinach, bacon, cream cheese, mozzarella. Topped with Panko crumbs and Parmesan cheese. Sautéed green and yellow garden squash, and finished off with a baby spinach salad with cashews, cheese, bacon, cherry and pear tomatoes, and raspberry merlot vinaigrette.

Looks great blank, but I don’t care for spinach, could broccoli or cauliflower be substituted???

We just like spinach salads, so chopped up some extra and added to it for color; you really couldn't even taste it. The nice thing is everything works with the portobellos. Especially good with ground beef or Italian sausage! Lots of variations on the internet.

Where do you come up with this stuff? You are killing me.
