Belly Warmer

It finally got above zero, and up to 20 degrees today. Unfortunately, they are saying snow all day! Bah Humbug. frown

Big pot of home made clam chowder hit the spot for lunch, with some Tabasco and the little oyster crackers.

The fresh clams I had the other day I bought just to have several meals out of, with fresh ones. Steamers and beer is pretty hard to beat. They keep for about 7-10 day on ice.

I always keep a few cans of clams in my pantry (whole, chopped, and minced), because they are so versatile in many different recipes. I love good red clam sauce and pasta, or shrimp and clams in white sauce and linguine.

I have some crappie in the freezer. Never done but might try fish chowder with It. What you think?

I think crappie would be amazing in a chowder, but it's delicate so don't stir too much. Would you want milk or cream based, or a rich tomato based stew like East Carolina style? That's the way I've had it the most, over around Santee Cooper and SC low country

The recipe I found online that looked pretty good was a cream based (evaporated milk). I’d eat It any way though!

Was it this one? I have made it before, and while it was very good, I didn't like the mushroom soup competing with the other flavors. I substituted a can of cream of potato and one of cream of bacon the next time, and thought it was amazing!! Good luck!!

I’m guessing cod is heartier than crappie because 10 minutes of simmering crappie and It just turned in to flakes instead of actual chunks of meat.
But dang, it’s delicious!
