Boudin stuffed porkchops

Boudin stuffed porkchops - 02/03/22 06:39 PM

Get down Charlie Brown! I had a 20 lb batch of boudin sent over from Best Stop market in Scott, LA. I smoked 10 lbs and left the other for boiling. Wow what a treat. Took a couple thick cut chops, stuffed them with the smoked boudin, seared and baked them. Prepared a crawfish pontchartrain sauce with plenty of cayenne pepper. Built the plate with simple Jasmine rice, Stuffed Chops, sauce and some sweet roasted carrots. My hunters ate like kings.

Do you like Boudin? We eat it regularly

That looks spectacular!

Yes I am a boudin connoisseur, and Best Stop is one of my favorites. I finally started making my own boudin and hog head cheese a few years ago, still working on perfecting it.

Best Stop is as good as it gets. NuNu's is solid as well and so is Poche's (this one actually owned by a cousin of mine).
