I hate to say it, but I really don't have much of a recipe. It comes out kinda different every time, depending on what I have available and/or open. Can't screw up meat and good gravy!!! This is the basics tho:
1/4 cup butter
1/2 cup red wine
1 1/2-2lb boneless beef sirloin steak, cut in thin strips, patted dry (or use all your left over steaks and roast, sliced or cubed)
1 cup chopped onions (I cut in large pieces, so the wife can pick them out of hers)
8 oz fresh white mushrooms, thinly sliced (may substitute 2 small cans of sliced)
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon Worcestershire
1-2 cloves garlic, finely chopped
1 cup beef flavored broth (from carton, or mixed Better than Boullion)
1 can (10.5 oz) condensed mushroom soup
1/4 cup AP flour
1 tablespoon cornstarch
w/ 1-2 tablespoons water, to dissolve cornstarch
4 oz cream cheese (from 8-oz package), cubed or
1/2 cup heavy cream
1/2 cup sour cream
8 cups hot cooked egg noodles
I simmer the mushrooms in butter until softened and browned. Add in the onions and meat and cook to a nice rare, adding the diced garlic at the end. Be careful not to burn the garlic.
Add the wine and beef broth and cook over medium heat until bubbling.
Add the spices and Worcestershire
Add the mushroom soup, cream cheese, sour cream, or heavy cream. Turn heat down to LOW
Add the flour and mix well, continuing to stir as it heats up and thickens
** If it is too thick, you can add more broth or wine. Too thin and add the corn starch and water mix to thicken. For a browner sauce, add another can of mushroom soup.
