And before anyone says "yer not serpose to brown da sausage ber da ber"....I like my sausage like I like my women, brown.....and there are actually other legitimate reasons for doing so IMO.

Sorry just catching up. Yes those are chicken thighs, no not battered. Just cut into large pieces, seasoned with Fremin's Magic Dust, and browned in the andouille and chicken fat.
