Going on an Oryx meat hunt, I love that meat, sure hate to loose all that neck meat, ANY quick and easy ideas would be appreciated!

You can easily not cook a neck and not loose the meat, debone it and grind it.

Either debone & grind it, or my personal favorite - brown it in a dutch oven then braise it low and slow.

Neck RoastTry this ^^ makes delicious tacos. Just add some pickled red onions & homemade salsa.

The neck roast is one of my favorite cuts off an animal. I use skinners recipe above, you can make a neck osso buco, make pulled venison similar to pulled pork, just about any way you want to braise it. I rarely grind the neck because some of our favorite dishes come out of it. It’s really great for people who “may not like deer meat”

On a deer neck, I strip off the thick pieces for grinding. The rest I put on my stick burner low & slow while I'm processing the meat. Cook until it all get loose from the bone. Shake & strip off the loose meat removing any leaders & such. Makes great tacos!
