Hanger Steak

Got some great hanger steaks , rubbed and seared. Asparagus with a lemon-caper cream sauce . And my favorite parmesan crusted taters. Washed it all down with a good Zin. Bourbon for dessert

Did you find it at a specialty market, or just luck out and get one the butcher missed. That's like finding a unicorn!!

It comes from the upper belly/diaphragm.

HEB carries them once in a while. Great cut of beef.

Hanger or flat iron is an outstanding piece of meat and little known but while cheaper 3-4 years ago isn’t anymore as the secret is out. I love to make fajitas with flat iron. Tender and flavorful and unlike flank or skirt steak it’s very forgiving and tender.

They are not too bad but need to be heated up a bit. The wife likes them so thats what we get.

Hanger steaks came from a butcher shop. And they are hard to find.

Had to look up Hanger steak also.

"A hanger steak, also known as butcher's steak or hanging tenderloin, is a cut of beef steak prized for its flavor. This cut is taken from the plate, which is the upper belly of the animal. In the past it was among several cuts of beef sometimes known as "butcher's steak", because butchers would often keep it for themselves rather than offer it for sale. This is because the general populace believed this to be a crude cut of meat, although it is actually one of the most tender"
