Been in the brine 7 days, 1 day in spring water. Now on and up to 170. Ruebens in our future!

Came off the beast at 201 degrees, and after a short rest I had to have a nibble. Sammiches coming soon!

That looks awesome, I love pastrami. I make about 2 briskets into smoked pastrami a year.

Looks delicious. My wife won’t eat it so that would be a waste of a brisket for me. Could this be done with a chuck roast?
