That picana looks dang good ! I never thought about smoking a Spam so Running the smoker today and tried it.... not bad at all Good bark and kinda like pork belly.
I want to do picanha on rotisserie on the grill sometime. Maybe even use grill smoker chip box to add some smoke.
I've done it on the rotisserie as well, true Brazilian style. I prefer it whole vs sliced on the rotisserie. Don't get me wrong the rotisserie style is really good as well, but this is a little better.

I slice it just like that then brown it in a skillet for breakfast sandwiches. Kind of like fried bologna.
