Grilled Chicken Caesar Dinner Tonight - 08/22/21 12:32 AM

When you do the Old Bay-style cheddar biscuits (think Red Lobster), and there's lots of chicken - your mind just wanders to Caesar salads!! Came out pretty good, you can eat all you want and still tell yourself it's healthy calories. The tomatoes and lettuce make it a salad!!! Wash it down with a nice red wine!!!

I think they are addicting. I ate a couple of them warm out of the oven, with butter on top. Then with the meal, I ate a couple more warmed in the microwave with butter inside. They were just as good!!! smile

Super easy to make them at home!!

INGREDIENTS:
* 2 cups all-purpose flour
* 1 tablespoon sugar
* 1 tablespoon baking powder
* 2 teaspoons garlic powder
* 1/2 teaspoon salt
* 1/4 teaspoon cayenne pepper (optional)
* 1 cup buttermilk (can be regular milk with 1 tablespoon of vinegar or lemon juice added)
* 1/2 cup butter, melted
* 1 cup shredded sharp cheddar cheese

FOR THE TOPPING
* 3 tablespoons butter, melted
* 1 tablespoon chopped fresh parsley leaves
* 1/2 teaspoon garlic powder

* Preheat oven to 425 degrees F. Line a baking sheet with parchment paper, non-stick foil, or a silicone baking mat; set aside.
* In a large bowl, combine the flour, sugar, baking powder, garlic powder, salt and cayenne pepper (if using).
* In a separate glass measuring cup or another bowl, whisk together buttermilk and butter. Pour mixture over dry ingredients and stir using a spoon/spatula just until moist. Gently fold in cheese.
* Using a couple spoons drop a mound (1/4-cup measuring cup) of the batter evenly onto the prepared baking sheet. Place into oven and bake for 12-15 minutes, or until golden brown.
* For the topping, whisk together butter, parsley and garlic powder in a small bowl. Brush the tops of the biscuits with the butter mixture.
* Served warm is best
