Pork Steaks - 08/22/21 12:12 AM

Picked up a pack of pork steaks from Sam's... Besides smothered/rice/gravy, how else do you guys cook 'em?

When you say pork steaks, do you mean chops or steaks? We never do bone in steaks (blade steaks) any way except BBQ or fried, after marinating in beer and apple cider vinegar. Some garlic, onion, paprika and it comes out red - just like a good Kansas or Missouri fry. We do all of our chops with country or pepper gravy, and it can be rice or smashed potatoes, and green vegetables!!!

Pounded out thin and breaded with potatoes and braised cabbage

I'm talking bone in, slided shoulder steaks, not chops. I never considered doing them fried... I guess for the grill, I'll do the pork marination and run 'em slow.

FYI, out at the lease, one of our guys went to fry up some Stag and couldn't find any flour, so he tried a mix of pancake mix and fish fry which was on hand and it came out pretty dang awesome.

I'm on phone. Hope this works. This is really similar to how we like to do them.

I like to smoke them for about 2 hours the. Smother in a watered down apple cider vinegar and bbq sauce mix and simmer till they are super tender. My favorite way to eat them.

Well, I havenโ€™t fully adopted the behavior of taking pictures of my food before eating. ๐Ÿ˜€ I did a 2 day ACV and apple juice marinade with my Big Moe Cason Pork Rub. Cooked them about 250 on the gas Weber for about 45 minutes and those rascals were some kind of good! Highly recommended and great price performers at Samโ€™s.

Smothered pork steaks are mighty fine. A good rice & gravy is hard to beat, as you know.

One of my favorite ways to cook them is real simple, everybody loves them including the kiddos.

Fire a up the pit using mesquite wood & charcoal. Season your pork steaks with SPG, or whatever you feel like.
Sear the steaks over the fire and them move them over to indirect heat until they have good color.

Wrap them up tight in foil covered with sliced onions and garlic cloves, add just a little beer. Cook indirect heat until they are tender. Without them falling apart remove from foil and place back on open grill, brush with a light coating of your favorite BBQ sauce until it caramelizes a bit. Then return to foil until serving.

Always tender & tasty.
