While digging around in the freezer yesterday for those burgers, I found this package that I had forgotten about. It's a really slow day around the house, so let's babysit the grill!!!

After just a couple hours at 225 degrees, it's starting to come together nicely!!

Really similar to our Apple Muffins , both are great for breakfast. .
Cinnamon Apple Cake
* 1/2 cup butter, softened
* 1/2 cup white sugar
* 1/2 cup brown sugar
* 2 large eggs
* 1/2 tsp vanilla extract
* 1 1/4 cup all-purpose flour
* 1 tsp baking soda
* 1 tsp ground cinnamon
* 1/4 tsp salt
* 1 1/2 cups chopped and peeled apples (about 2 medium apples)
* 1/2 cup chopped walnuts
INSTRUCTIONS
* Heat oven to 350°F. Spray a 9-inch round cake pan with cooking spray.
* In large bowl, beat softened butter and sugars with electric mixer on medium speed until light and fluffy.
* Beat in eggs, one at a time. Stir in vanilla, flour, baking soda, cinnamon and salt.
* Stir in the chopped apples and walnuts. Spoon into your greased pan.
* Bake 40 to 45 minutes or until toothpick inserted in center of cake comes out clean.
* Cool about 10-15 minutes. Cut the warm cake into slices and serve with ice cream.
Cinnamon Apple Muffins
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup softened/melted butter (1 stick)
1 cup white sugar
2 large eggs
1 teaspoon vanilla
1/3 cup milk
2 tablespoons oil
1 1/2 cups chopped and peeled apples
1/2 cup packed brown sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
1 tablespoon butter
Preheat oven to 375 degrees F. Grease a large 6, or standard 12 cup muffin pan.
In a medium bowl, mix dry ingredients - flour, baking powder, baking soda and salt.
In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla and milk
Gradually blend in the flour mixture.
Stir in the chopped apples ( can use large pieces, if blended)
Spoon into the baking cups, or greased muffin pan
In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs.
Sprinkle mixture over tops of the muffin mix, in muffin pan.
Bake 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
Allow to sit 5 minutes before removing muffins from pan.
Cool on a wire rack, to allow air circulation.
