Cooked a whole red snapper w/homemade chimichurri sauce as a rub. Turned out tasty. This was a first time for me.

Years ago we took Mr. G to Sicily. We got invited to go with him and his friends to one of the Islands between there and Italy. I don't remember the name of the Island but Mr. G. was going to donate money for a museum they were planning on building. Anyway they prepared a lunch for us. They took a whole fish. Was fairly large because there were over 20 of us there. They packed it in salt and put it in a oven. What I remember was that when we were seated at the table there were about 5 sets of silverware in front of us. Each time after we were served one set was taken away. The last course was the fish. They took it out of the oven and removed all the salt. Then served it. Was probably some of the best fish I have ever eaten.
