Leftover crawfish & sausage means it’s gumbo time

I freaking love good Cajun food, yet somehow I’ve never made a roux before this. Here goes my first attempt at legit gumbo - more pics to follow

Heat is off, time to rest with a lid for a bit. I feel like Homer Simpson drooling over donuts waiting on this.

No joke my wife tells me this morning that she doesn’t like gumbo. 30 minutes into the roux I get a text from upstairs, “what are you cooking? It smells really good”.

It’s go time. And don’t judge my utensil game.

I used avocado oil. I think the high smoke point helped me keep from burning it a few times. Lots of stirring and lots of heat management.

I think most people fail at making a proper roux when trying to use an electric stove. Like you said, proper heat management and quick response with gas!!
