We are pretty simple here in the mountains. Takes 4 hours to trap a dozen, so we just boil and eat with butter!! smile

An old Cajun taught us a great add on to the pot, Cauliflower. Man does it absorb the spices.
Otherwise we do the basic of corn on the cob, red potatoes, onions and the mud bugs.

corn on the cob, red potatoes, onions, sausage, elephant garlic cloves, lemons, mushrooms, and the mud bugs. Along with a ton of seasoning. Mushrooms always being one of my favorites. It really soaks up the seasoning.

Louisiana seasoning, potatoes for 7-8 minutes, then add corn, halved lemons, mushrooms, halved onions, sausage, garlic for 3 minutes, then crawfish, asparagus, broccoli, cauliflower, and jumbo shrimp. Bring to a full boil and then turn off gas. Wait 10 minutes before taking the lid off.

I do my crawfish and the vegetables in separate pots. In the vegetable pot though I like Gold mini potatoes/whole heads of garlic/ onion foil packs (I make with quartered onion/margarine/crawfish boil seasoning/delicious)/corn, homemade smoked sausage (or little smokies)/lots of mushrooms/cans of green beans (poke holes in sides of can/remove wrapper/drop in/delicious)/and whole jumbo fresh jalapenos. I've done cauliflower/asparagus etc but was kinda meh to me.

When I'm throwing down on some crawfish I personally just like to eat the bugs/onion/garlic. It's easy to get full on fillers.

Potatoes, Onions, Garlic (lots), Mushrooms, Corn, Sausage (if it's not Good Friday), Lemons, Oranges, Frozen Concentrated OJ, Arts Seafood Boil made at Targils in Opelousas, La, Targils Liquid Boil, Salt, Cayenne Pepper, and Lemon Oil.

You have to be really careful with the lemon oil, it's very strong. I only add about a tablespoon when I start the soak.

I boil the potatoes first and put them in an ice chest (covered) when they are almost done.


Add onions, garlic, lemons, oranges, frozen OJ, seasonings and bring to a boil
Add crawfish
Bring to a boil
Shut off and add mushrooms, corn, sausage and lemon oil
Stir and cover for 15-20 mins depending on size and hardness of shells

Pour on table and eat

Mushrooms,sausage, corn, taters, brussell sprouts, garlic cloves, shrimp, green beans, and carrots in this batch. Its all about the order of what you cook. All veggies, shrimp and sausage go in first and are just boiled in water. Seasoning doesn't really stick until they are sitting in the cooler with butter so that when I add the dry season. Crawfish are boiled last then dumped in the cooler with butter and season. Let sit for 10 minutes and shake them around. Sit for another 10 minutes and they soak the butter and season into the shell. Sample and serve. Pot is a lot easier to clean that way too.

Went to the store for provisions today. Got 2lb of mushrooms on y’all’s recommendation.

Time to break in the new burner and burn off all the oil / paint / made in China stuff.

Corn was a bust - gummy as all hell. Went with frozen because I couldn’t find any fresh ears worth a damn. I added it to the pot when I shut off the heat right before the soak, so I don’t think it was overlooked. There’s probably a reason it was destined for the freezer and not the produce section confused2
