Easter leg of lamb

Started last night with a milk/garlic marinade. Then olive oil, lemon zest, more garlic, lemon juice, kosher salt and pepper. A couple of sprigs of rosemary and in to the sous vide. Will try and remember pics after the sear in the broiler.

Love it. There is a big difference mutton and lamb. Just wanted to be clear.

Can't stand mutton, actually find lamb is pretty good. Especially in a crown roast, where it can drain properly.

Best I’ve made so far. Texmati rice with lemon and sumac. Tzatziki sauce for balance. Salad just because I guess.
