Shrimp - make shift - 03/25/21 06:46 PM
The wife had bought a bag of nice sized frozen shrimp, so I thought I would make up some shrimp alfredo. She had a jar of Paul Newman alfredo sauce in the pantry that I was going to use but it turned out to be a couple months past the expiration date and smelled a bit too funky for me to waste the shrimp, so used a jar of garlic mushroom spaghetti sauce instead.
shelled and deveined the shrimp. chopped up a couple of slices of thick bacon and started browning, once the bacon was about done, dropped in the shrimp for a few minutes per side until they made a C shape (O shape is over cooked). Removed the shrimp/bacon from the skillet, put in 1 TBS unsalted butter, 1 heaping TBS chopped garlic and half a small sweet onion and let those Sautee for a bit. Poured in about half a jar of the spaghetti sauce and brought to a good simmer before putting the shrimp/bacon back in. Once the linguine was done, plated along side a nice side salad. Turned out pretty good although I had my heart set for the alfredo (didn't have the ingredients to make from scratch).
