Fillet Mignon Tacos

Bought a bunch of filet mignon cheaper than I could buy flank steak or marinated fajita meat, so we used it for tacos tonight. Seasoned with citrus lime mix, sliced ready to serve and then tossed in a hot skillet for about a minute while constantly stirring. I like my red meat... well RED but the spawn dictates that it’s at least medium rare. Placed it in toasted tortillas with cojita cheese and fresh cilantro, and a few dabs of Cholula hot sauce.

For a side we did Mexican street corn, seared in a skillet, creama, cojita, cilantro, and a few more dabs of Cholula.

Absolutely fantastic.

Oh, a paper plates because it’s Friday and we generally eat out on Fridays.

THAT's what I'm talking about brother. Looks great!

It's crazy how expensive skirt steaks (& flank) have gotten. Even beef cheeks. Made some barbacoa again the other day, and was over $20 for two packs of cachetes. eek2

Looks wonderful, well done on the meat. Have you tried a creamed roast corn, it's awesome. I love the taste of Chollula, and can add a little heat with Tabasco, without changing the taste!!

Since all of our citrus is picked green in Texas or Mexico, and shipped in, it is hard to keep it fresh for very long. After about a week, the limes or lemons are the size of golf balls and just as hard. I started using these packets of powdered lime in some of the recipes and they are a great back-up to the real thing.
